{strawberry cupcakes with strawberry frosting}

Happy Tuesday! I’m baking up some strawberry cupcakes this afternoon- perfect for a sunny Spring afternoon! These cupcakes are ideal for those of us that love a little sweet treat made with fresh berries. For this batch, I used one of my favorite Martha Stewart recipes- her Strawberry Cupcake recipe that can be found here. For the frosting, I LOVE Sprinkles’ Strawberry Frosting recipe that is also found over on Martha Stewart’s site. After an afternoon of using a hand mixer, I discovered one thing that is for sure….I need a stand mixer. Big time. This girl’s arm is sore šŸ™‚ Haha

Here’s what you’ll need for the cupcakes:Ā 

1 1/2 cups all-purpose flourĀ 
1 1/2 cups cake flour
1 tablespoon baking powder
1 teaspoon salt
1 cup unsalted butter at room tempĀ 
1 3/4 cups sugar
4 eggs
2 teaspoons vanilla
1 1/4 cups milkĀ 
10 ounces of strawberries dicedĀ 

Steps to make:Ā 

  1. Preheat oven to 350 degrees and line cupcake pans with liners (makes 30 cupcakes)Ā 
  2. Sift together flours, baking powder, salt and set to the sideĀ 
  3. Beat butter and sugar until light and fluffy
  4. Gradually add in eggs and vanilla, mix thoroughly
  5. Add flour and milk, mix until well combined
  6. Fold in strawberries
  7. Fill cupcake cups about 2/3 full and bake cupcakes for about 20 minutes or until golden brown
  8. Cool completely before frosting

Here’s what you’ll need for the frosting:Ā 

1 cup strawberries
2 cups unsalted butter, slightly cold
Pinch of course salt
7 cups confectioners’ sugar, sifted
1 teaspoon vanillaĀ 

Steps to make:Ā 

  1. Place strawberries in food processor and process until pureed
  2. Beat together butter and salt until light and fluffy
  3. Slowly add confectioners’ sugar until combined
  4. Add vanilla and 6 tablespoons of strawberry puree
  5. Mix just until combined
  6. Frost your cupcakes and enjoy!! (These cupcakes store well in the refrigerator)
