Happy Saturday, friends! I don’t know bout y’all, but it is a BEAUTIFUL day here in Kansas. With a crazy week behind me, this day has been a relaxing blessing. Earlier this week, I was perusing old blogs I had saved and came across one from The Pioneer Woman in which she mentioned this store called “Sweet Baking Supply”. After seeing all the neat and unique tools and decorations they were using, I immediately headed to the supplier’s website hoping that they shipped products and was insanely surprised to find that one of their two shops is located just about an hour away from Manhattan! I’ve been trying to get to the store for weeks and finally made it happen today. The store was just as cool as I expected it to be, everything you’d need for baking or candy making.
I snapped a few photos, but this one highlights two of my favorites – rows of sprinkles and cupcake wrappers!
Armed with some new tools and decorations, I was left feeling in a mood to bake up a batch of cupcakes. With the warm weather we’ve been having lately, lemon cupcakes were sounding yummy and I remembered seeing a recipe that paired the cupcakes with blackberry buttercream frosting. I used this recipe from allrecipes.com to make the cupcakes.
Here’s what you’ll need for the cupcake batter:
1 cup of sugar
1/2 cup butter
1 1/2 tsp of vanilla
1 1/2 cup of flour
1 3/4 tsp of baking powder
1/2 cup milk
1 lemon, juiced and zested
Steps to make:
1. Preheat oven to 350 degrees and place cupcake liners in about 16 muffin cups
2. Cream sugar and butter together until light and fluffy
3. Add eggs and vanilla and mix thoroughly
4. Add flour, baking powder, milk, lemon juice and lemon zest until batter is smooth
4. Place batter in the cups and bake for about 25 minutes
5. Let cupcakes cool
Here’s what you’ll need for the frosting:
1 cup of softened butter
1 tsp vanilla
1/4 tsp salt
4 cups of powdered sugar
1/2 cup of blackberry jam
Steps to make:
1. Mix butter, vanilla and salt in stand mixer until smooth. Add powdered sugar until combined
2. Add blackberry jam until thoroughly mixed
Once the cupcakes have cooled, it is time to put it all together! I used my new piping set from Sweet Baking Supply and topped my cupcakes off with an edible sugar topper flower (also found at the store). Last but certainly not least, I added a fresh blackberry to add a little bit more color!
