On this Saturday morning, I’m whipping up some of my favorite snack bars! Y’all know I love recipes that are super quick and include things that you already may have lying around the pantry. These oat bars are loaded with peanut butter and chocolate chips- definitely a plus! I love keeping this snack in my kitchen because they are such a filling sweet treat.
Here’s what you’ll need:
1/2 cup reduced fat creamy peanut butter
1/3 cup honey
1 egg
2 tablespoons canola oil
3 1/2 cups oats (I like to use the old fashioned oats over quick oats)
1/2 cup brown sugar
1 teaspoon vanilla
2/3 cup peanut butter and chocolate chips
To kick off this quick mix, beat peanut butter, honey, egg, oil, brown sugar and vanilla in a large bowl until mixture is smooth.
Next, stir in oats and chips until thoroughly combined.
Just like that, you’re done with making the recipe! Spread mix into a greased 9×13 pan and bake at 350 degrees for about 16-18 minutes, or until the edges are beginning to brown.
Let stand until cool, and cut into individual bars in your desired size!
I think these are the perfect treat for entertaining, lunch boxes or basically anything! I like keep them stored in the refrigerator to keep them a bit chilly. I’m enjoying one this morning with a glass of milk while I catch up on some magazine reading and cheering on Team USA in the Olympics! Enjoy!
